Sometimes even well intentioned meal-planning doesn’t yield the results we want, this is when having a back catalogue of simple, quick recipes you know from memory ensures quality, filling cooking.

One of my favourites is quorn meatball spag-bol.

Key ingredients:

Passata/ chopped tomatoes 

Tomato purée



Frozen veg**

Quorn mince /meatballs 

Brown pasta 

Cheese is optional 

** frozen veg is a lifesaver when it comes to the end of the week and you’ve run out of fresh stuff and the shops are shut! It’s also great when you’re in a rush.
